In this world of fabricated celebrity where “Masterchefs” can’t cook and “experts” self-promote well beyond their limited skills we occasionally find the real thing. Someone who is deeply passionate and knowledgeable of their subject, someone who has a lifetime of learning and experience … someone who has experienced the best there is of food and wine and can talk eloquently and engagingly of it.
Christopher Hayes is just one of those.
Starting his working life as a mid-teenager in his family’s wine store he had four years of wine retail experience and one hands-on winemaking vintage before he was legally allowed to drink. In parallel with his university studies and professional career and regular vintages in wineries around Australia, by his mid-twenties he had developed Hayes Fine Wines (Terrigal) into a fine wine store to challenge the very best of Australia. This was groundbreaking wine history in Australia and he shared exclusive Australian and imported wine releases with the renowned Len Evans Wines, and developed wine education courses, and held wine dinners, long before they became de rigeur.
His knowledge was honed by years at Len Evans’ Monday table – an incomparable forum of wine education – and his own tasting and travels. He purchased and re-developed Len Evans Wines in Bulletin Place, Sydney, which – as Hayes Fine Wines (Sydney) –was awarded “Best Bottle Shop in Australia” by both the Sydney Morning Herald and The Age.
No less passionate about food, Christopher was responsible for The Retreat Restaurant, Terrigal (as a chef), Barrenjoey House and Perry’s all becoming hatted establishments in the Good Food Guide. Later he established the pioneering Hazi’s Wine Bar winning “Wine List of the Year”.
Christopher’s contributed to Vogue Entertaining, Gourmet Traveller Australia, and as tastings chairman for Wine & Spirit Buying Guide and Winestate, then food & wine for LINO, and restaurant reviewer formX, he extended his wine writing and reviewing, recounting his travels and dining experiences,and reviewing the world’s greatest restaurants.
He presented food, wine & cooking shows, before channeling this extensive experience into his web site – Eat & Drink. Launched in 2002 as “the” guide to “all things fine in food & wine across Australia”,Eat & Drink has become the definitive critical guide and supporter of quality in the industry.In 2015 the international domain (www.eatanddrink.com) is being launched as a webmag under the banner of Eat + Drink + Travel.
Eat & Drink Consulting – established in 2009 – provides professional advisory services to the broader hospitality and fine food industry.
Highly respected for knowledge of both food and wine he has appeared on television productions as diverse as The 7.30 Report and Kerry-Anne Kennerley; he has travelled extensively, judging wine across Australia and internationally from Europe to Argentina, and reviewed restaurants, producers and food outlets across the globe.In early 2014 he chaired the judging of the inaugural Australian Distilled & Liqueurs Awards, part of the 2014 Royal Melbourne Fine Food Awards.
Christopher is known as a pioneer of fine wine marketing and retailing in Australia and regularly presents events and tastings of wine across all markets. Few have such broad experience in so many facets of the hospitality industry, and even fewer relate it so entertainingly.
